Hot Herbed Tomatoes

Ingredients

  • 8 to 10 ripe tomatoes
  • 1/4 c. finely chopped celery
  • freshly ground black pepper
  • salt
  • 2 Tbsp. snipped chives
  • 1 Tbsp. chopped fresh oregano or 1/4 tsp. dried oregano
  • 3 Tbsp. butter
  • 1 clove garlic, crushed
  • 1 tsp. sugar
  • 2 Tbsp. finely chopped parsley

Instructions

  1. Choose even-sized, rather small tomatoes. Place in a bowl; cover with boiling water. Leave 30 seconds and pour off water. Peel off skins. Heat butter in a frying pan; add celery and garlic and saut 5 minutes. Add tomatoes; sprinkle with salt, pepper and sugar and spoon butter over them. Cover and cook gently for 5 minutes. Sprinkle on herbs; baste again with butter and cook, uncovered, for 5 minutes, basting often.
  2. Spoon sauce once more over tomatoes before serving. Serve hot with roast poultry, beef, veal and grilled meats. Serves 4 to 5.
