A creamy, cheesy tortellini bake loaded with spinach and mushrooms, perfect for comforting family dinners or entertaining guests with rich, savory flavors.

Ingredients

  • 8 oz. Brick cheese
  • 8 oz. Mozzarella cheese
  • 2 boxes cheese tortellini
  • 1 box frozen spinach
  • 2 sticks butter
  • 1 lb. mushrooms

Instructions

  1. Boil the tortellini for 8 minutes and drain.
  2. Melt 1 stick of butter in a skillet and sauté mushrooms and spinach until tender.
  3. Sprinkle garlic powder to taste over the sautéed vegetables.
  4. Melt 1 stick of butter in a saucepan, add brick cheese and mozzarella cheese, and cook with milk until creamy.
  5. Mix the cooked tortellini with the cheese sauce and sautéed vegetables.
  6. Pour the mixture into a 9 x 13-inch baking pan.
  7. Bake at 350°F for 20 minutes until bubbly and golden.
  8. Serve warm.
