Hummus(Dip)

Ingredients

  • 3 cloves garlic, minced
  • 2 (16 oz.) cans chickpeas (garbanzo beans)
  • 3 Tbsp. olive oil
  • 1/4 c. lemon juice
  • 3/4 c. tahini paste
  • 1 tsp. paprika
  • salt and pepper to taste
  • parsley for garnish

Instructions

  1. Combine garlic and drained chickpeas (reserve liquid) in food processor.
  2. Add olive oil, lemon juice, tahini paste and paprika. Process until mixture is smooth.
  3. Beat in sufficient liquid from chickpeas until consistency of sour cream.
  4. Add salt and pepper to taste.
  5. Serve with pita wedges, crackers or fresh vegetable "dippers".
