Ingredients

  • 1/4 c. tahini
  • 1 clove garlic
  • 20 oz. can chickpeas
  • 1/4 c. lemon juice
  • 1/4 c. olive oil
  • 1/2 tsp. salt
  • 1/8 tsp. white pepper

Instructions

  1. In an electric blender, whirl together the tahini, lemon juice, olive oil, garlic, salt, and white pepper until smooth.
  2. With the blender running, tip the center cap in the cover and gradually add the chickpeas, blending until smooth and a pale color.
  3. Stop the blender as necessary and, with a rubber spatula, push the mixture towards the blades to ensure all the chickpeas are crushed.
  4. Chill, tightly covered.
  5. Serve as a spread with crackers or small wedges of hot pita.
