Ingredients

  • 16 oz. can stoneless cherries
  • 5/8 cup water
  • 1 tablespoon cornstarch
  • 1/8 cup sugar
  • 1 tablespoon lemon juice
  • 1 small carton sour cream
  • a few mint leaves

Instructions

  1. Empty the can of cherries into a strainer over a pan.
  2. Push the cherries through the strainer, mashing them in a blender if necessary.
  3. Add water and cook over medium heat until the mixture starts to boil.
  4. Mix cornstarch and sugar with a little water to make a slurry.
  5. Add the cornstarch mixture to the soup.
  6. Cook for 10 minutes, stirring constantly.
  7. Add lemon juice and stir to combine.
  8. Pour the soup into a bowl and chill in the refrigerator.
  9. Serve cold with a spoonful of sour cream and a few mint leaves.
