Ingredients

  • 1 cup slivered almonds, coarsely chopped (4 oz.)
  • 12 sugar cones (4 oz. box)
  • 1/2 cup chocolate chips
  • 5 tablespoons unsalted butter
  • 1 quart ice cream, softened

Instructions

  1. Preheat oven to 350°F.
  2. Place almonds on a baking sheet and toast, stirring occasionally until lightly browned (10 to 12 minutes). Cool completely.
  3. Crush sugar cones into small pieces using a rolling pin and waxed paper.
  4. Place toasted almonds and crushed cones in a medium-sized bowl.
  5. Stir chocolate chips and butter in a small, heavy saucepan over low heat until melted.
  6. Pour the melted chocolate mixture over the cone and almond mixture, stirring to coat evenly.
  7. Press 1/3 of the crumb mixture evenly over the bottom of a 9-inch pie plate.
  8. Spread half of the softened ice cream over the crumb layer.
  9. Repeat with 2 more layers of crumbs and ice cream, ending with a crumb layer on top; press down gently to help adhere.
  10. Cover with foil and freeze until firm.
  11. The pie can be frozen up to 1 month if desired.
