Ingredients

  • 3/4 cup sugar
  • 1/2 cup Bisquick baking mix
  • 2 eggs
  • 2 (8 oz) packages cream cheese, softened and cut into 1-inch cubes
  • 2 teaspoons vanilla
  • 1/2 teaspoon grated lemon peel

Instructions

  1. Heat oven to 350°F (175°C).
  2. Grease a 9-inch pie plate with 1 1/4-inch sides.
  3. Place all ingredients except topping in a blender container.
  4. Blend on high speed, stopping occasionally to stir, until smooth, about 3 minutes, or beat in a large bowl with electric mixer for 2 minutes.
  5. Pour mixture into the prepared pie plate.
  6. Bake until puffed and center is dry, about 30 minutes.
