Individual Lime Cheesecakes

Ingredients

  • 12 vanilla wafers
  • 3/4 c. 1% low-fat cottage cheese
  • 1 (8 oz.) pkg. Neufchatel cheese, softened
  • 1/4 c. plus 2 Tbsp. sugar
  • 2 eggs
  • 1 Tbsp. grated lime rind
  • 1 Tbsp. lime juice
  • 1 tsp. vanilla
  • 1/4 c. vanilla low-fat yogurt
  • 2 medium kiwi, peeled, sliced and halved

Instructions

  1. Line 12 muffin pans with paper baking liners.
  2. Place 1 vanilla wafer in each.
  3. Place cottage cheese in blender or food processor. Cover and process until smooth.
  4. Combine Neufchatel and cottage cheese in medium bowl, beat on medium speed until smooth and creamy.
  5. Gradually add sugar.
  6. Add eggs, lime rind, lime juice and vanilla; beat until smooth.
  7. Spoon mixture over wafers.
