Ingredients

  • 1 envelope Knox unflavored gelatine
  • 1/2 cup sugar
  • 2 tablespoons instant coffee
  • 1/4 teaspoon salt
  • 3 eggs
  • 1 cup milk
  • 9-inch baked or crumb crust pie shell
  • whipped cream or Cool Whip

Instructions

  1. Mix Knox unflavored gelatine, 1/4 cup sugar, instant coffee, and salt thoroughly in the top of a double boiler.
  2. Beat 3 egg yolks and 1 cup milk together.
  3. Add the egg yolk mixture to the gelatine mixture.
  4. Cook in the double boiler until the gelatine dissolves completely, stirring constantly, about 10 minutes.
  5. Chill the mixture to room temperature.
  6. Pour the filling into a baked or crumb crust pie shell.
  7. Refrigerate until set, then top with whipped cream or Cool Whip before serving.
