Ingredients

  • 1 (9-inch) pie crust, baked
  • 1 (3 oz.) pkg. instant French vanilla pudding
  • 1 cup milk
  • 1 pint sour cream
  • 3 ripe peaches, peeled and sliced
  • 1/4 teaspoon almond extract
  • 1/4 cup apricot preserves

Instructions

  1. Combine pudding mix, milk, sour cream, and almond extract in a bowl.
  2. Beat with a wire whisk for 1 minute until smooth.
  3. Pour the mixture into the baked pie crust.
  4. Let sit until the filling is set.
  5. Arrange peeled and sliced peaches on top of the filling.
  6. In a small saucepan, heat apricot preserves and water, stirring until mixture begins to bubble.
  7. Cool slightly and spoon over the peaches.
  8. Refrigerate the pie until chilled and ready to serve.
  9. Serve with whipped cream if desired.
