Ingredients

  • 2 envelopes unflavored gelatin
  • 1 cup sugar, divided
  • 1/4 teaspoon salt
  • 3 tablespoons Irish cream gourmet coffee
  • 8 eggs, separated
  • 2 cups water
  • 2 teaspoons vanilla

Instructions

  1. Mix gelatin, 1/2 cup sugar, salt, and coffee in the top of a double boiler.
  2. Beat egg yolks and water together in a separate bowl.
  3. Add the beaten egg yolks mixture to the gelatin mixture.
  4. Cook over boiling water, stirring constantly until gelatin is dissolved.
  5. Remove from heat and stir in vanilla.
  6. Beat egg whites until stiff.
  7. Gradually beat in remaining sugar into the egg whites.
  8. Fold the beaten egg whites into the gelatin mixture.
  9. Chill until set, then top with whipped cream before serving.
