Ingredients

  • 1 large onion
  • 1 can cream of mushroom soup
  • 1 can chopped Ro-Tel tomatoes
  • 1 jar Cheez Whiz

Instructions

  1. Chop the onion and cook in a little butter in a saucepan until tender.
  2. Add a can of cream of mushroom soup and a can of chopped Ro-Tel tomatoes to the saucepan.
  3. Cook until the mixture thickens slightly.
  4. Add a small jar of Cheez Whiz to the mixture and boil gently.
  5. Boil the potatoes unpeeled until tender.
  6. Slice the cooked potatoes crosswise and layer them in a casserole dish.
  7. Pour the soup mixture over the layered potatoes.
  8. Top with crumbled bacon and grated cheese.
  9. Bake in a 350°F oven for about 15 minutes until hot and bubbly.
