Ingredients

  • 1 large carton cottage cheese
  • 1/2 stick butter, cut into small cubes
  • 1/4 lb. sharp Cheddar cheese, cut into small cubes
  • 3 eggs, beaten
  • 1 package frozen chopped spinach, thawed and drained
  • 1/4 teaspoon salt
  • 3 tablespoons plain flour

Instructions

  1. Put cottage cheese, cubed cheese, butter, drained spinach, beaten eggs, and salt in a large bowl.
  2. Mix well until all ingredients are combined.
  3. Add plain flour to the mixture and stir to incorporate.
  4. Pour the mixture into a well-greased 8 x 8-inch baking dish.
  5. Bake in a preheated oven at 350°F (175°C) until pretty spots appear on top, about 45 minutes.
  6. Allow to cool slightly before serving. May be made the day before and reheated.
