Ingredients

  • 1 Tbsp. minced garlic
  • 1 small onion
  • 1 pkg. fresh whole leaf spinach
  • 1 small can diced tomatoes, drained
  • 1 (4oz.) jar sliced mushrooms, drained

Instructions

  1. Saute garlic and onion in olive oil until the onion is clear.
  2. Add spinach and cook on medium heat until tender and wilted.
  3. Add drained diced tomatoes and drained sliced mushrooms.
  4. Simmer until heated through.
