Ingredients

  • 1 medium zucchini, thinly sliced
  • 1 medium onion, sliced thin
  • 2 medium tomatoes, sliced thin
  • 15 oz. can tomato sauce
  • 1 tsp. basil
  • 1 tsp. oregano
  • 2 cloves garlic, minced
  • 4 Tbsp. Parmesan cheese

Instructions

  1. Preheat oven to 350°F.
  2. Combine tomato sauce, basil, oregano, and minced garlic in a bowl.
  3. Spray an 8 x 5-inch baking dish with cooking spray.
  4. Arrange vegetables in layers in the baking dish: zucchini, onion, tomato, tomato sauce, and Parmesan cheese.
  5. Repeat the layering two more times.
  6. Cover and bake for 30 to 35 minutes.
  7. Let cool for a few minutes before serving.
