Italian Vegetable Toss
A vibrant, colorful vegetable salad with Italian-inspired flavors, perfect for light lunches or picnics, combining fresh veggies, olives, and a tangy Italian dressing.
Ingredients
- 1 1/2 cups shell macaroni ⓘ
- 2 cups broccoli flowerets
- 1 cup cauliflower flowerets ⓘ
- 1 cup sliced fresh mushrooms ⓘ
- 6 oz. can artichoke hearts, drained, rinsed and chopped
- 1 cup sliced, pitted black olives
- 1/2 cup chopped green onion
- 2/3 cup Italian cheese dressing
- 1 medium avocado, seeded, peeled and sliced
- 1 medium tomato, seeded and chopped ⓘ
Instructions
- Cook the shell macaroni, then rinse and drain.
- In a large bowl, combine the cooked macaroni with broccoli, cauliflower, mushrooms, artichoke hearts, black olives, and green onion.
- Add the Italian cheese dressing to the mixture and toss to coat evenly.
- Cover the bowl and chill in the refrigerator for several hours to allow flavors to meld.
- Just before serving, add the sliced avocado and chopped tomato to the salad and gently toss.
