A vibrant, colorful vegetable salad with Italian-inspired flavors, perfect for light lunches or picnics, combining fresh veggies, olives, and a tangy Italian dressing.

Ingredients

  • 1 1/2 cups shell macaroni
  • 2 cups broccoli flowerets
  • 1 cup cauliflower flowerets
  • 1 cup sliced fresh mushrooms
  • 6 oz. can artichoke hearts, drained, rinsed and chopped
  • 1 cup sliced, pitted black olives
  • 1/2 cup chopped green onion
  • 2/3 cup Italian cheese dressing
  • 1 medium avocado, seeded, peeled and sliced
  • 1 medium tomato, seeded and chopped

Instructions

  1. Cook the shell macaroni, then rinse and drain.
  2. In a large bowl, combine the cooked macaroni with broccoli, cauliflower, mushrooms, artichoke hearts, black olives, and green onion.
  3. Add the Italian cheese dressing to the mixture and toss to coat evenly.
  4. Cover the bowl and chill in the refrigerator for several hours to allow flavors to meld.
  5. Just before serving, add the sliced avocado and chopped tomato to the salad and gently toss.
