Jack County Fruit Cobbler

Ingredients

  • 1/2 c. butter
  • 1 c. sugar
  • 1 c. flour
  • 1 tsp. salt
  • 1 Tbsp. baking powder
  • 3/4 c. milk
  • 1 qt. freezer bag fruit (peaches, apricots or boysenberries) or canned fruit

Instructions

  1. Melt butter in sheet cake baking pan.
  2. If using frozen fruit, cook slowly for 30 minutes with 1 cup sugar.
  3. After cooking, you should have 1/2 to 1 cup juice.
  4. Do not drain.
  5. Pour fruit and juice over butter in pan.
  6. Mix sugar, flour, salt, baking powder and milk to make batter.
  7. Pour over fruit.
  8. Sprinkle with 1/2 cup sugar before baking.
  9. Bake at 350° for 30 minutes until slightly brown on top and cobbler mixture is firm.
