Jalapeno Squash

Ingredients

  • 2 lb. fresh squash or 2 (10 oz.) pkg. frozen squash
  • 8 slices bacon
  • bread crumbs
  • 1 roll jalapeno cheese, cut up
  • 1 large onion, cut in rings

Instructions

  1. Boil squash; drain.
  2. Fry bacon and crumble.
  3. Brown onion rings in bacon drippings.
  4. Layer 1/2 of squash, bacon, onions and cheese in 9 x 9-inch casserole dish.
  5. Repeat layers.
  6. Top with bread crumbs.
  7. Bake at 325 ° for 40 minutes.
  8. Serves 10.
