Jane'S Coconut Pie

Ingredients

  • 5 Tbsp. sugar
  • 1/2 tsp. salt
  • 2 egg yolks, beaten
  • 1 Tbsp. butter
  • 1 baked (9-inch) pie shell
  • 2 egg whites
  • 5 Tbsp. flour
  • 2 c. milk
  • 1 small can coconut
  • 1 1/2 tsp. vanilla

Instructions

  1. Combine sugar, flour and salt in top of double boiler.
  2. Add milk and egg yolks, stirring until smooth.
  3. Cook over boiling water 5 minutes or until thickened, stirring constantly.
  4. Add 1 cup coconut.
  5. Remove from heat; add butter and vanilla.
  6. Pour into baked pie shell.
  7. Beat egg whites.
  8. Add sugar.
  9. Put on top of pie. Sprinkle with coconut.
  10. Brown in 350° oven.
