Jan'S Peanut Brittle

Ingredients

  • 1 c. sugar
  • 1/4 c. water
  • 1/2 c. white Karo
  • 5 Tbsp. margarine
  • 2 c. raw peanuts
  • 1 tsp. soda
  • 1 tsp. vanilla

Instructions

  1. Cook over medium heat sugar, water, Karo, margarine and peanuts, stirring most
  2. of the time until temperature reaches hard crack stage (310°).
  3. Stir constantly from about hard ball stage on.
  4. Mixture gets
  5. thick and brown.
  6. Will scorch easily. You may need
  7. to
  8. try
  9. different temperatures because altitude will make a difference. (You
  10. may
  11. need to cook beyond 310°.) Remove from heat. Add soda and vanilla.
  12. Stir well.
  13. (Mixture will turn olive drab green.)
  14. Pour
  15. out
  16. onto buttered cookie sheet.
  17. Let set about 1 hour before breaking apart.
  18. Best left uncovered when possible;
  19. gets sticky in a container.
