Jan'S Peanut Brittle
Ingredients
Instructions
- Cook over medium heat sugar, water, Karo, margarine and peanuts, stirring most
- of the time until temperature reaches hard crack stage (310°).
- Stir constantly from about hard ball stage on.
- Mixture gets
- thick and brown.
- Will scorch easily. You may need
- to
- try
- different temperatures because altitude will make a difference. (You
- may
- need to cook beyond 310°.) Remove from heat. Add soda and vanilla.
- Stir well.
- (Mixture will turn olive drab green.)
- Pour
- out
- onto buttered cookie sheet.
- Let set about 1 hour before breaking apart.
- Best left uncovered when possible;
- gets sticky in a container.
