A colorful, fruity cabbage slaw with a tangy gelatin base, combining grapefruit juice, pineapple flavor, olives, and shredded cabbage, perfect for light gatherings or summer side dishes.

Ingredients

  • 4 cups IGA grapefruit juice
  • 2 or 3 packages pineapple flavored gelatin
  • 2 tablespoons sugar
  • 4 cups finely shredded cabbage
  • 1/2 cup thinly sliced stuffed olives
  • mayonnaise

Instructions

  1. Bring 2 cups of grapefruit juice to a boil.
  2. Pour over pineapple-flavored gelatin, salt, and sugar; stir until dissolved.
  3. Add the remaining 2 cups of grapefruit juice.
  4. Chill until the gelatin starts to congeal.
  5. Fold in finely shredded cabbage and sliced stuffed olives.
  6. Reserve a few slices of olives and grapefruit for garnish.
  7. Brush the bottom and sides of a 5 1/2 x 10 1/2 x 3-inch loaf pan with mayonnaise.
  8. Spoon the gelatin mixture into the prepared pan.
  9. Chill until set.
