Jelly Fruit Slaw
A colorful, fruity cabbage slaw with a tangy gelatin base, combining grapefruit juice, pineapple flavor, olives, and shredded cabbage, perfect for light gatherings or summer side dishes.

Instructions
- Bring 2 cups of grapefruit juice to a boil.
- Pour over pineapple-flavored gelatin, salt, and sugar; stir until dissolved.
- Add the remaining 2 cups of grapefruit juice.
- Chill until the gelatin starts to congeal.
- Fold in finely shredded cabbage and sliced stuffed olives.
- Reserve a few slices of olives and grapefruit for garnish.
- Brush the bottom and sides of a 5 1/2 x 10 1/2 x 3-inch loaf pan with mayonnaise.
- Spoon the gelatin mixture into the prepared pan.
- Chill until set.
