Ingredients

  • 5 lb ground meat
  • 3 tsp heaping garlic salt
  • 5 heaping tsp Morton Tender Quick salt
  • 4 tsp black pepper
  • 3 tsp liquid smoke
  • 3 tsp soy sauce
  • soul seasoning

Instructions

  1. Mix all of the ingredients in a large container with a cover. Remove from the container every day for two days and knead.
  2. After the second day, measure out a portion approximately the size of a soft ball.
  3. Pat out the portion and place between wax paper, then use a rolling pin to roll out to a very thin piece less than 1/4-inch thick.
  4. Remove the top layer of wax paper and place the meat on an oven rack face down.
  5. Remove the last piece of wax paper and sprinkle with soul seasoning.
  6. Place the rack in an oven at 180°F (82°C) for 6 hours or longer until the meat is dry but not hard.
  7. Allow the jerky to cool, then cut into desired lengths.
