Ingredients

  • 3 c. sugar
  • 3 c. flour
  • 2 c. cooked mashed or 2 jars junior carrots
  • 1 1/2 c. oil
  • 2 tsp. each: baking soda, baking powder and cinnamon
  • 4 eggs
  • 3/4 c. raisins and/or walnuts or 1 c. raisins or 1 c. walnuts

Instructions

  1. Stir ingredients with wooden spoon.
  2. Bake at 350° for 40 minutes in 13 x 9 x 2-inch pan.
  3. (Test by toothpick inserted comes out clean.
  4. May take less time if glass dish.)
