Ingredients

  • 1 lb. hot peppers
  • 6 cups sugar
  • 1 box Certo

Instructions

  1. Wash and dry the hot peppers.
  2. Cut peppers into small pieces, including seeds.
  3. Place peppers in a blender with vinegar and puree until it resembles foam and has the texture of oatmeal.
  4. Pour the pepper mixture into a saucepan and add sugar.
  5. Bring to a boil and let simmer for 10 minutes.
  6. Skim off foam if desired.
  7. Stir to ensure all sugar is dissolved.
  8. Add both packets of Certo (pectin) to the mixture.
  9. Let the mixture cool for 10 to 15 minutes.
  10. Pour the jelly into jars and store in a cool place.
