Ingredients

  • 4 eggs
  • 2 (16 oz.) cans pumpkin
  • 1 1/2 c. firmly packed brown sugar
  • 1 1/2 tsp. pumpkin pie spice
  • 1 1/2 Tbsp. flour
  • 1/2 tsp. salt
  • 2 Tbsp. vanilla
  • 2 (12 oz.) cans evaporated milk

Instructions

  1. Combine eggs and pumpkin.
  2. Blend in sugar, spice, salt and flour; mix well.
  3. Pour into an unbaked pastry shell.
  4. Bake at 400° for 15 minutes; then reduce heat to 325° and continue baking for 35 to 40 minutes or until done.
  5. Makes 3 pies.
