Ingredients

  • 2 tsp. unsalted butter
  • graham crackers
  • 7/8 c. sugar
  • 3 tsp. sifted cornstarch
  • 3 oz. cream cheese at room temperature
  • 1 extra large egg
  • 1/2 c. heavy cream
  • 3/4 tsp. vanilla

Instructions

  1. Preheat oven to 450°.
  2. Liberally grease the side and bottom of an 8-inch spring-form pan with butter.
  3. Crush to powder enough graham crackers to lightly coat bottom.
  4. Refrigerate pan until ready to use.
  5. Mix the sugar with the cornstarch.
  6. Add the cream cheese and stir to blend well; stir in egg and blend again.
  7. Add heavy cream, a little at a time and mix.
  8. Stir in the vanilla. Spoon the batter into prepared pan.
  9. Bake for approximately 40 minutes until top is golden brown.
  10. Transfer cheesecake to a rack and let cool for 3 hours.
