Ingredients

  • 1/4 cup egg yolks
  • 1 1/3 cups sweetened condensed milk
  • 1/2 cup lime juice from concentrate
  • green food coloring as desired
  • 1 baked pastry shell

Instructions

  1. Preheat oven to 400°F.
  2. In a mixer bowl, combine egg yolks and sweetened condensed milk.
  3. Stir in lime juice and green food coloring, if desired.
  4. Pour the mixture into the baked pastry shell.
  5. Bake for 5 to 8 minutes.
  6. Chill the pie for 3 to 4 hours.
  7. Top with meringue or whipped topping before serving.
