Key Lime Pound Cake

Ingredients

  • 1 c. butter or margarine
  • 8 oz. cream cheese
  • 2 3/4 c. sugar
  • 5 eggs
  • 2 1/4 c. all-purpose flour
  • 3/4 c. self-rising flour
  • 1/4 c. Key Lime juice
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. coconut-flavored extract
  • 3/4 c. coconut (not fresh or frozen)

Instructions

  1. Combine butter and cream cheese in large bowl.
  2. Beat until blended. Add sugar and beat well. Add the eggs, one at a time, beating well after each addition. Combine the all-purpose flour with the self-rising flour. Stir to mix.
  3. Add to the creamed mixture alternately with the Key Lime juice.
  4. Stir in the extracts and coconut.
