Ingredients

  • 3 c. burghul
  • 1 kg lean lamb or hogget from leg
  • 1 large onion
  • 3 tsp. salt
  • 1 tsp. freshly ground black pepper
  • 1 tsp. ground allspice
  • iced water or ice chips (about 1/2 c.)

Instructions

  1. Place burghul in a bowl, cover with cold water and leave to soak for 10 minutes.
  2. Drain in a sieve and press with the back of a spoon to remove as much moisture as possible.
  3. Spread the burghul in a flat dish and chill in the refrigerator for 1 to 2 hours to dry further.
  4. Trim all fat and fine skin from the meat and cut into cubes.
  5. Chill the meat for 1 hour if not very cold.
  6. Pass the meat through a grinder twice, using a fine screen.
  7. Grind the onion twice and combine with the meat, burghul, salt, pepper, and allspice.
  8. Pass the mixture through the grinder twice, adding a little iced water or ice chips if it feels warm.
  9. Knead the mixture to a smooth, light paste with your hands, adding iced water or ice chips when necessary.
  10. Cover and chill until ready to use.
