Kim'S Corn Casserole

Ingredients

  • 1 (1 lb.) can creamed corn
  • 1 (1 lb.) can whole kernel corn, drained
  • 1 c. sour cream
  • 2 eggs, slightly beaten
  • 2 tsp. sugar
  • 1 1/2 sticks butter, melted
  • 1 (8 1/2 oz.) pkg. corn muffin mix (Jiffy mix)
  • 2 c. grated Mozzarella cheese

Instructions

  1. Combine the two kinds of corn. Stir in sour cream and beaten eggs. Add sugar and melted butter. Stir in corn muffin mix. Pour batter into ungreased casserole. Bake at 350° for 35 to 40 minutes. Remove from oven. Top with cheese. Return to oven just long enough to melt cheese.
