Ingredients

  • 8 oz. kiwi fruit
  • 1 c. heavy cream
  • 4 egg whites
  • 8 oz. sugar
  • 1/2 oz. gelatin, melted in 5 Tbsp. water
  • 1 (8-inch) sponge cake
  • 1 c. strong tea
  • whole kiwi fruit

Instructions

  1. Briefly puree 8 ounces of kiwi and pour into a bowl.
  2. Whip the heavy cream into soft peaks.
  3. Whisk the egg whites until stiff; sprinkle with sugar toward the end and beat to incorporate the sugar.
  4. Stir the melted gelatin into the kiwi puree.
  5. Fold in the whipped cream, then the egg whites.
  6. Pour half the mousse into an 8-inch round mold that is 3 inches deep.
  7. Refrigerate for 15 minutes.
  8. Pour strong tea over the sponge cake and let it absorb.
  9. Place the soaked cake in the mold in one piece.
  10. Add the remaining mousse on top.
  11. Freeze for 4 hours.
  12. Garnish the mousse with whole kiwi fruit.
