Ingredients

  • 1/2 pineapple
  • 1 cup sugar
  • 1/3 cup water
  • 1 cup lemon juice
  • 1 1/2 cups unsweetened pineapple juice
  • 1 1/2 bottles Puerto Rican rum
  • 2 quarts sparkling water
  • 1 pint strawberries

Instructions

  1. Remove pineapple meat from shell, then slice and dice.
  2. Make a syrup by boiling sugar and water for a few minutes; cool the syrup.
  3. Pour the cooled syrup over the diced pineapple.
  4. Mix pineapple, lemon juice, pineapple juice, rum, and sparkling water in a large pitcher.
  5. Chill the mixture for at least 2 hours.
  6. Slice strawberries and add to the punch before serving.
