Latija is a creamy Filipino dessert featuring a smooth custard layer atop moist sponge cake, infused with vanilla and cinnamon, perfect for gatherings or special occasions.

Ingredients

  • 8 oz. sponge cake
  • 1 can evaporated milk
  • 1 2/3 c. cold water
  • 1/4 c. cornstarch
  • 6 Tbsp. sugar
  • 2 tsp. vanilla
  • 2 Tbsp. butter
  • 2 eggs
  • cinnamon

Instructions

  1. Slice the sponge cake lengthwise into two layers and place on the bottom of a platter.
  2. Place 1 1/3 cups of water in a saucepan; bring it almost to a boil.
  3. Add the evaporated milk and sugar to the hot water and stir until dissolved.
  4. Mix the remaining 1/3 cup of water with cornstarch and vanilla until smooth.
  5. Gradually add the cornstarch mixture to the milk mixture, stirring constantly until the mixture is cooked and no lumps remain.
  6. Remove from heat and stir in the butter until melted.
  7. Add the well-beaten eggs slowly, stirring vigorously to incorporate.
  8. Pour the custard evenly over the sponge cake.
  9. Sprinkle generously with cinnamon on top.
  10. Chill before serving to allow the latija to set.
