  • 1/4 cup chopped pecans

Instructions

  1. Drain the pear halves, reserving the liquid.
  2. Dice the pears and set aside.
  3. Add water to the reserved pear liquid to make 1 1/2 cups; bring to a boil in a small saucepan.
  4. Stir the boiling liquid into the lime gelatin in a large bowl until completely dissolved, at least 2 minutes.
  5. Stir in the cold ginger ale and lemon juice.
  6. Reserve 2 1/2 cups of the gelatin at room temperature.
  7. Pour the remaining gelatin into a 5-cup mold.
  8. Refrigerate for about 30 minutes or until thickened.
  9. Arrange about 1/2 cup of the diced pears in the thickened gelatin in the mold.
  10. Gradually stir the reserved 2 1/2 cups of gelatin into the softened cream cheese in a large bowl until smooth.
  11. Refrigerate for about 30 minutes or until slightly thickened.
  12. Stir in the remaining diced pears and chopped pecans.
  13. Spoon the cream cheese mixture over the gelatin layer in the mold.
  14. Refrigerate for 4 hours or until firm.
  15. Unmold the layered mold and garnish as desired.
