Ingredients

  • 2 lb. lean ground beef or lamb
  • 2 tsp. salt
  • 2 sticks oleo or butter
  • 1 tsp. black pepper
  • 1 tbsp. cumin
  • 3 cups rice
  • 6 cups water
  • 1 29 oz. can crushed tomatoes
  • 2 tsp. minced garlic
  • 1 small head cabbage shredded
  • Pine nuts (optional)

Instructions

  1. In a 4-quart pot, toast pine nuts in butter until golden brown.
  2. Remove pine nuts with a slotted spoon and set aside.
  3. In the same butter, sauté the ground beef or lamb until browned.
  4. Add rice and all seasonings to the meat and stir to combine.
  5. Pour in water and crushed tomatoes, then add garlic and shredded cabbage.
  6. Return pine nuts to the pot, stir well, bring to a boil.
  7. Reduce heat, cover, and simmer for 25-30 minutes until rice is cooked and flavors meld.
