Ingredients

  • 1 egg (optional)
  • 3 cups self-rising cornmeal
  • 8 oz. picante sauce
  • milk

Instructions

  1. Beat the egg (if using), then add the self-rising cornmeal, picante sauce, and enough milk to make the mixture smooth.
  2. Spray an iron skillet or muffin pan with nonstick cooking spray.
  3. Pour the batter into the prepared pan.
  4. Bake at 375°F (190°C) for about 30 minutes or until done.
  5. For extra flavor, fry a few strips of bacon until very crisp and crumble into the batter before baking.
