Ingredients

  • 3 whole chicken breasts
  • 1 stick margarine
  • 8 oz sour cream
  • 8 oz box Escort crackers
  • 1 can cream of chicken soup
  • 1 can cream of onion, mushroom or celery soup
  • salt and pepper to taste

Instructions

  1. Cook and debone the chicken breasts.
  2. Crush the Escort crackers and mix with melted margarine.
  3. Place three-quarters of the cracker mixture in the bottom of a 9 x 13-inch baking dish.
  4. Arrange the cooked chicken pieces on top of the cracker layer.
  5. Mix together the cream of chicken soup, cream of onion, mushroom, or celery soup, and sour cream.
  6. Pour this mixture over the chicken.
  7. Sprinkle the remaining cracker mixture over the top.
  8. Bake at 325°F for 30 to 40 minutes.
