Ingredients

  • 2 cups Carnation evaporated milk
  • 8 egg yolks
  • 1 teaspoon lemon rind or vanilla
  • 1 cup sugar
  • 1/2 cup caramel syrup

Instructions

  1. Scald the Carnation evaporated milk in a double boiler for 15 minutes.
  2. Beat the egg yolks until well combined.
  3. Add the sugar and flavoring to the egg yolks, then pour in the hot milk and mix well.
  4. Pour the mixture into a 1-quart mold.
  5. Place the mold in a large pan half-filled with water.
  6. Steam or bake for about 1 hour or until the mixture becomes firm.
  7. Allow to cool before removing from the mold. Optionally, line the mold with caramel syrup before pouring in the mixture.

Tips & Substitutions

To achieve a smoother texture, ensure your egg yolks are at room temperature before mixing. If you want a twist, try adding a splash of coconut milk for a tropical flavor. If you don't have caramel syrup, you can make a quick version by melting sugar until golden brown. For best results, use fresh eggs for a richer taste.

Serving Suggestions

Serve chilled and garnish with a drizzle of caramel syrup or fresh fruit for added flavor. It pairs beautifully with Orange Slice Squares for dessert or can be enjoyed alongside a cup of strong coffee. For an elegant presentation, slice into wedges and plate with a sprig of mint.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the leche flan in the microwave for 15-30 seconds at a time, checking for warmth, or steam it gently for a few minutes on the stovetop to prevent drying out.

Frequently Asked Questions

Can I use whole milk instead of evaporated milk?

While whole milk can be used, it won't provide the same creamy texture and richness as evaporated milk. If you must substitute, consider using a mix of whole milk and cream for a closer result.

What should I do if my leche flan doesn't set?

If your leche flan is not firm after baking, it may need more cooking time. Check regularly to avoid overcooking. Alternatively, ensure the steam or water bath is maintained at a gentle simmer throughout the cooking process.

Can I make this recipe dairy-free?

Yes, you can create a dairy-free version by using a plant-based evaporated milk alternative, such as coconut or almond milk. Make sure to adjust the sugar as needed, as some alternatives can be sweeter.
