Ingredients

  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1/3 cup vinegar
  • 1/3 cup water
  • 4 cups cooked, whole small beets
  • 1 cup pineapple chunks
  • salt and pepper to taste
  • 3 tablespoons butter

Instructions

  1. Combine sugar and cornstarch in a saucepan.
  2. Stir in vinegar and water, then cook over low heat until thick and clear, stirring often.
  3. Do not boil hard.
  4. Add cooked, whole small beets and simmer for 5 minutes.
  5. Add pineapple chunks and heat through.
  6. Add salt, pepper, and butter.
  7. Cook for 1 minute and serve.
