Ingredients

  • 1 1/4 lb. black cod fillets or steaks
  • 1 tsp. grated lemon peel
  • juice of 1 lemon
  • 1 Tbsp. brown sugar
  • 1 Tbsp. vegetable oil

Instructions

  1. Rinse the fish with cold water.
  2. Pat dry with a paper towel.
  3. Cut the fish into 4 equal-sized serving portions.
  4. In a small bowl, combine grated lemon peel, lemon juice, brown sugar, and vegetable oil.
  5. Brush the mixture onto the fish fillets.
  6. Preheat the broiler.
  7. Place the fish on a broiler pan lined with foil or a baking sheet.
  8. Broil the fish for about 4 minutes per side, or until cooked through and slightly browned.
