Ingredients

  • 1 1/4 lb. salmon
  • 1 cup chopped onion
  • 1 cup grated Cheddar cheese
  • salt and pepper to taste
  • 1/3 cup sliced almonds
  • 2 cups chopped crackers
  • 1/4 cup margarine
  • 2 tablespoons parsley
  • 2 teaspoons powdered mustard

Instructions

  1. Cook chopped onion in margarine until tender, about 7 minutes.
  2. Mix the cooked onion with grated Cheddar cheese, sliced almonds, chopped crackers, parsley, powdered mustard, salt, and pepper.
  3. Layer the mixture in a 1.5-quart loaf pan, starting with the stuffing, then placing the salmon on top.
  4. Top the salmon with sliced almonds.
  5. Bake at 350°F (175°C) for 35 to 40 minutes.
