Ingredients

  • 4 cups zucchini, peeled and diced or sliced thin
  • 1/2 cup apple juice
  • 1 1/2 cups sugar
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon salt
  • 2 tablespoons cornstarch
  • 1 (9-inch) pie shell, unbaked
  • 2 tablespoons lemon juice
  • 2 tablespoons margarine
  • 1/4 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 2 tablespoons water

Instructions

  1. Bring the zucchini, apple juice, lemon juice, nutmeg, ginger, cinnamon, and margarine to a boil; boil for 3 minutes.
  2. Add cornstarch and water, stirring constantly.
  3. Cook for 1 minute more; remove from heat.
  4. Place the cooked mixture into an unbaked 9-inch pie shell.
  5. Add the top crust to the pie.
  6. Bake at 450°F for 25 minutes.
