Lemon Fluff Pudding

Ingredients

  • 3 Tbsp. soft butter or margarine
  • 1 c. granulated sugar
  • 1/4 c. flour
  • 3 eggs, separated
  • 2 tsp. grated lemon rind
  • 1/4 lemon juice
  • 1 1/2 c. milk
  • 1/4 tsp. salt

Instructions

  1. Cream butter, 1/2 cup of the sugar and flour in mixing bowl. Add egg yolks; beat well.
  2. Stir in lemon rind, juice and milk.
  3. In a different bowl, add salt to egg whites and beat until stiff. Slowly add in remaining 1/2 cup of sugar; fold into first mixture. Pour into 1 1/2-quart buttered baking dish.
  4. Set dish in shallow pan, containing boiling water 1-inch deep.
  5. Bake in 325° oven for 1 hour.
  6. Cool.
  7. Serve with or without whipped cream.
