Ingredients

  • 3 oz. lemon Jell-O
  • 3/4 cup boiling water
  • 1 package Duncan Hines Deluxe II yellow cake mix
  • 1/2 cup Wesson oil
  • 4 eggs
  • 1 teaspoon lemon flavoring
  • 1 teaspoon almond flavoring

Instructions

  1. Preheat oven to 350°F.
  2. Grease a tube pan generously and flour it.
  3. Blend 3/4 cup boiling water with lemon Jell-O until dissolved.
  4. Empty the cake mix into a mixing bowl and blend in the prepared Jell-O.
  5. Add oil and mix thoroughly.
  6. Add eggs one at a time, blending well after each addition.
  7. Add lemon flavoring and almond flavoring, then blend well.
  8. Pour batter into the prepared tube pan.
  9. Bake in the preheated oven for about 60 minutes or until a toothpick inserted into the center comes out clean.
  10. Remove cake from oven and invert onto foil to cool.
  11. Once cooled, top with icing and cover with foil until the icing settles.
