Lemon Lace Pudding

Ingredients

  • 1 Tbsp. butter or margarine
  • grated rind and juice of 1 lemon
  • 1 c. milk
  • 3/4 c. sugar
  • 2 eggs
  • 3 Tbsp. flour

Instructions

  1. Separate egg whites and yolks.
  2. Cream the butter or margarine with the sugar.
  3. Add grated rind and juice.
  4. Blend into the first mixture the egg yolks, flour and milk.
  5. Beat the 2 egg whites until stiff, but not dry.
  6. Fold into first mixture.
  7. Pour into ungreased casserole dish.
  8. Place dish into pan of hot water in a 350° oven and bake 35 to 45 minutes, until knife inserted in the center comes out clean.
  9. Remove from oven and cool before serving. Makes 4 to 6 servings.
