Lemon Pumpkin Pie

Ingredients

  • 1 1/2 c. pumpkin
  • 1 1/4 c. sugar
  • 2 c. milk
  • 3 eggs, separated
  • 1/2 tsp. vanilla
  • 1/2 tsp. lemon flavor
  • 1 tsp. nutmeg
  • 1 Tbsp. flour
  • pinch of salt

Instructions

  1. Beat egg whites until they hold peaks.
  2. Mix other ingredients together.
  3. Fold in egg whites.
  4. Bake in prepared crust at 400° for 10 minutes, then at 325° for 45 minutes.
