Lemon Snow is a light, creamy dessert blending tangy lemon flavor with fluffy evaporated milk and crunchy vanilla wafers, perfect for refreshing summer gatherings or special occasions.

Ingredients

  • 1 small box lemon Jell-O
  • 1 1/2 cups hot water
  • 1 cup sugar
  • 1/2 cup lemon juice
  • 1 can evaporated milk
  • 2 cups crushed vanilla wafers

Instructions

  1. Dissolve the lemon Jell-O in hot water; let it set, but not too stiff.
  2. Put the dissolved Jell-O into a bowl and add lemon juice slowly while beating.
  3. Gradually beat in sugar until fully incorporated.
  4. Beat the mixture until it becomes thick and foamy.
  5. Chill the evaporated milk and then beat until stiff.
  6. Fold the whipped evaporated milk into the gelatin mixture.
  7. Place 1 cup of crushed vanilla wafers on the bottom of a 9 x 13-inch pan.
  8. Pour the lemon mixture into the pan on top of the wafers.
  9. Top off with remaining crushed wafers.
  10. Chill the dessert for about 3 hours before serving.
