- Dissolve the lemon Jell-O in hot water; let it set, but not too stiff.
- Put the dissolved Jell-O into a bowl and add lemon juice slowly while beating.
- Gradually beat in sugar until fully incorporated.
- Beat the mixture until it becomes thick and foamy.
- Chill the evaporated milk and then beat until stiff.
- Fold the whipped evaporated milk into the gelatin mixture.
- Place 1 cup of crushed vanilla wafers on the bottom of a 9 x 13-inch pan.
- Pour the lemon mixture into the pan on top of the wafers.
- Top off with remaining crushed wafers.
- Chill the dessert for about 3 hours before serving.
