Lemon Sugar Almonds

Ingredients

  • 1 egg white
  • 1 lemon, juice of
  • 3/4 cup sifted powdered sugar
  • 1 1/2 teaspoons grated lemon rind
  • 1 dash ground nutmeg
  • 1 1/2 cups whole blanched almonds, toasted

Instructions

  1. In a large bowl, beat the egg white and lemon juice, combine with almonds, and set aside.
  2. Combine the remaining ingredients (sugar, lemon rind, & nutmeg) in a small bowl, and mix into almond mixture.
  3. Spread onto a greased baking sheet and bake at 300 degrees for 20 minutes or until coating is dry and almonds are crisp; stir almonds occasionally.
  4. Once cooled, store in airtight tins or in a zip-loc bag in your lunch bag :-).
