Ingredients

  • 6 Tbsp. butter, softened
  • 1 Tbsp. chopped lemon balm or lemon verbena
  • 1 Tbsp. chopped lemon thyme
  • 2 c. all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1 Tbsp. grated lemon zest
  • 1/4 tsp. salt
  • 3/4 c. milk
  • 2 eggs
  • 1 c. sugar

Instructions

  1. Grease a 9 x 5 x 3-inch loaf pan.
  2. Preheat oven to 325°F (160°C).
  3. Heat the milk with chopped lemon balm or lemon verbena and lemon thyme until fragrant, then let steep until cool.
  4. In a mixing bowl, cream the softened butter and sugar until light and fluffy.
  5. Add eggs one at a time, beating well after each addition.
  6. Stir in grated lemon zest.
  7. Combine the flour, baking powder, and salt in a separate bowl.
  8. Gradually add the dry ingredients to the wet mixture, alternating with the cooled infused milk, beginning and ending with the dry ingredients.
  9. Mix until just combined.
  10. Pour the batter into the prepared loaf pan.
  11. Bake for approximately 45 minutes or until a toothpick inserted into the center comes out clean.
  12. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
