- Heat the milk with chopped lemon balm or lemon verbena and lemon thyme until fragrant, then let steep until cool.

- Add eggs one at a time, beating well after each addition.
- Stir in grated lemon zest.
- Combine the flour, baking powder, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, alternating with the cooled infused milk, beginning and ending with the dry ingredients.
- Mix until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for approximately 45 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
