Ingredients

  • 1 1/2 lb. bass fillets
  • 1 Tbsp. lemon juice
  • 1/4 tsp. grated orange peel
  • salt to taste
  • parsley sprigs
  • 1/4 c. butter
  • 1/4 tsp. grated lemon peel
  • 1 tsp. dried tarragon

Instructions

  1. Place bass fillets on a broiler pan.
  2. Melt butter in a small saucepan.
  3. Add lemon juice, grated lemon peel, grated orange peel, tarragon, salt, and pepper to the melted butter, stirring to combine.
  4. Broil bass fillets for 8 to 10 minutes, brushing often with the lemon-butter mixture.
  5. Turn fillets over halfway through the cooking time.
  6. Check for doneness by seeing if the fish flakes when probed with a fork.
  7. Serve with parsley sprigs and lemon wedges.
